Recipes with my own touch
Stuffed baby marrows with pine nut salsa
I grab the jumbo baby marrows with all I have when I see them in the greengrocer. And you should too! They are amazing to stuff with all kinds of ingredients. This recipe is inspired by the master of vegetables, Yotam Ottolenghi. It is great to serve as a side next to roast chicken or fish or basically anything! You can make the stuffing a day ahead if you’re pressed for time.
Waffles
Waffles are such a kid-pleaser! So much so that it turns adults into big kids too! What I love about the recipe is that it’s low in sugar.
Lamb tikka bunny
We live in KZN and every family has their version of the best bunny. I’ve added my twist to the faithful Durban bunny by making lamb tikka masala instead. this curry has a ton of ingredients, but the end result is so well worth it, that I am sure this will become your new go-to curry! Do yourself a favour and go to the trouble of baking your own bread. These little loaves are so soft and fluffy, you will thank me later!
Lekker seafood paella
A festive occasion calls for a big statement, and this paella is just that: a colorful rice dish bursting with clams, mussels and shrimp along with smoky chorizo and saffron for tons of flavor. You don’t need much else to serve alongside it, but you could make a green salad if you feel inspired.
Creamy dreamy vegan chocolate ice cream
Who says you need cream for a creamy result? Frozen bananas are a great creamy, naturally sweet alternative. Use good quality cocoa powder for a more chocolatey flavour. This dessert is delicious and guilt-free!
Crayfish and smoked tomato risotto
Creamy risotto with luxurious bites of crayfish and the fresh pops of tomato. Enjoy with a glass of crisp white wine!
Gin & tonic sorbet
So, it was international gin day on the 10th of June! But who says it must only be celebrated for one day and that it must be enjoyed in liquid form? Enjoy a cheeky gin & tonic sorbet instead!
Baked cheesecake
This is the most delicate, delicious cheesecake ever! You’re bound to fall in love one bite at a time and forget about calories altogether! The best part is that it is so easy to make and is bound to turn you into a superhero in your friends’ eyes! Come on, give it a go and let me know how well it turned out!
Good old South African malva pudding
The best thing about this pudding besides it being basically flop-proof, is that you generally have all the ingredients at home. You can make it a couple of hours in advance and reheat in an oven @ 100ºC for a couple of minutes. Serve with cream or ice cream or both. I like mine with buttered popcorn ice cream.
Chicken teriyaki poke bowl
A poke bowl (pronounced “poh-KAY bowl”) is a Hawaiian dish that has its roots in Japanese cuisine. “Poke” means “cut into pieces” and the name refers to the slices or cubes of raw fish that are served in a bowl along with rice, dressing vegetables and seasonings. Our version uses chicken thighs, avocado and exotic mushrooms because they’re a match made in heaven! Play around with your favourite ingredients and let us know what your winning combo is!
Herby quinoa salad
This is one of my raid-the-fridge salads. You know the one you make when you don’t know what to make? When you end up standing in front of the fridge just staring at its contents? Well, this salad is a great way to clean out the veg in your fridge, but you can use sugar snap peas, red pepper, beetroot, broccoli, asparagus, peas, gosh, the combinations are endless!
Asian Coleslaw with ginger peanut dressing
Cabbage is having a bit of a moment right now, and I feel as if I’ve been waiting for it all along. This Asian Cabbage Salad with peanut dressing is light and bright, filling, and has been adding a burst of life to my lunch routine.
