Cake
180g dates, chopped
300ml boiling water
5ml bicarb of soda
60g butter
120g castor sugar
2 eggs
180g self-raising flour
3ml vanilla essence
Sauce
200g soft brown sugar
100ml cream
130g butter
3ml vanilla essence
Sticky toffee winter pudding
This is a finger-licking-good pudding. The dates add a lovely layer of sweetness and the caramel sauce oozes throughout to make it truly sticky! Doesn't matter the type of weather, this little beauty will go down a treat with those who love dates and caramel. You can make it a couple of days ahead of time and keep It in the fridge or even freeze it, defrost overnight in the fridge and reheat gently in the oven when you are ready to indulge!
Method
- Preheat oven to 170ºC. Grease an 180cm square of 20cm round dish. Combine dates and water, stir in bicarb and cool.
- Cream butter and sugar well, add eggs one at a time and beat well. Carefully mix in flour, salt and vanilla, then stir in date mixture. Pour into prepared dish and bake at 170ºC for 30 – 40 minutes.
- In the meantime place all the sauce ingredients in a saucepan and bring to the boil. Then simmer for 5 minutes. When pudding is cooked, remove from oven, cut into squares and pour boiling sauce. Return to oven for a few minutes.
- Serve with clotted cream, vanilla ice cream or kulfi.
