Ingredients
500g lamb mince
100g feta, crumbled
1½ t dried thyme
3 cloves garlic, crushed
10g parsley, finely chopped
45g fresh breadcrumbs
1/2t ground cinnamon
olive oil for frying
pomegranate molasses, to serve
Lamb & feta meatballs
I love meatballs! They are great as finger food and our kids love them too! Double bonus! These lamb meatballs with jewels of feta and a drizzle of pomegranate molasses are absolutely mouthwatering: perfect as part of a tapas meal or in a lunchbox for work or school. I usually make a couple of batches and freeze them in portions for those evenings where I just don't feel like cooking. Yes, believe it or not, that actually happens to me too!
Method
- Put the mince into a large bowl and add the feta, thyme, garlic, parsley, breadcrumbs, cinnamon, 1/2t salt and a good grind of black pepper. Mix well to combine. I use a stand mixer/food processor or, to be honest, I use my Thermomix.
- Form into ping-pong-sized balls.
- Add them to an airfryer, sprinkle with a bit of olive oil to fry for 8 – 10 minutes at 200ºC. Wiggle them twice while frying to make sure they brown all over.
- Transfer to a sewing platter and drizzle with pomegranate molasses.
