Ingredients
115g 64% dark chocolate
2 egg yolks
30ml sugar
415ml whipping cream
200ml whipping cream
chocolate sprinkles
Dark chocolate mousse
Chocolate mousse is a delicious, silky-smooth decadence first described as “mayonnaise de chocolate”? What an appropriate description! Legend has it that was invented by the French painter Henri Toulouse-Lautrec in the late 19th century. He was an experimental cook who loved to create signature dishes, but this was his singular success in the kitchen. It could be appropriate to describe him as the “Right-Said-Fred-I’m-Too-Sexy” of the culinary world! Let’s hope that a bit of his sweet success rubs off on us!
Method
- Melt the chocolate in a double boiler over gently simmering water. Set aside.
- In another bowl, whisk together the egg yolks, sugar and 50ml of the cream. Place this bowl over the saucepan of simmering water and whisk until the mixture is pale yellow and fluffy, about 5 minutes. Remove the bowl from the heat and stir in the melted chocolate. Allow to cool to room temperature
- In the bowl of an electric mixer, whip the remaining cream until soft peaks form. Using a spatula, fold half of the whipped cream into the chocolate mixture. Gently fold in the remaining whipped cream ensuring the mousse is fully mixed.
- Pour into 8 small glasses or ramekins and cool in the fridge until set.
- When ready to serve, beat the remaining cream. Put the cream in a piping bag and pipe over the set mousse. Top with chocolate sprinkles and serve.
