500g maas

15ml dried instant yeast

20g runny honey

70ml water, plus extra to spray

800g bread flour, plus extra to dust

10ml sea salt

oil, to grease

Buttermilk loaf baked in a cast iron pot

I bake bread for my family at least twice per week using my trusty Thermomix to make the dough. It’s so much cheaper and tastier than grocery store bread. This is one of my go-to breads. It yields a generous loaf, although my family almost devours it as soon as it comes out of the oven. The tender loaf, a Cookidoo recipe, is very soft with a beautifully crisp, golden crust thanks to the cast iron pot it is baked in. I prefer to use maas instead of buttermilk as I find that buttermilk is quite runny nowadays.

Method

  1. Heat the buttermilk, yeast and honey in a pan to lukewarm or 37°C.
  2. Add the buttermilk mixture, together with the water, flour and salt to the bowl of a stand mixer and knead for 10 minutes using a dough hook.
  3. Place the dough on a lightly oiled work surface and form into a smooth ball. Lightly grease a large bowl. Place the dough in the prepared bowl and cover with a damp tea towel. Set aside in a warm place to prove until doubled in size (approximately 1 hour).
  4. Place the dough on a work surface and gently knock back and shape into a loaf. Place on a large sheet of baking paper. Cover with the tea towel and set aside in a warm place to prove (approximately 20 minutes) while you heat a cast iron pot with lid in the oven at 210°C for 20 minutes.
  5. Dust the dough with flour and score with a few shallow cuts. Remove pot from the oven and carefully place loaf with paper into it. Spray loaf with water and quickly place lid back on pot. Bake for 40 minutes (210°C).
  6. Remove lid, spray with water once more, and bake another 15 minutes, or until loaf is crisp and sounds hollow when tapped on the underside.
  7. Allow to cool in the pot for 5 minutes, before transferring to a wire rack to cool. My loaf never makes it to the wire rack, so good luck with yours!
