8 popsicles

Ingredients

½ cup frozen blueberries + a couple more for adding  whole to the popsicles

1 cup coconut yoghurt double cream

Blueberry & coconut frozen yogurt popsicles

Did you know that there are 150 varieties of blueberries out there? But all are edible; some are actually toxic! These blue beauties are nutrient dense superfood loaded with anti-oxidants and they even reduce levels of bad cholesterol! That is why I love feeding them to my children. They love ice cream, so making these popsicles is a sure winner with them. They feel so empowered when they can open the freezer door and help themselves to these “ice cream” lollies!

Method

  • Blend the blueberries with a dash of water.
  • Add the yogurt to the blended blueberries and stir through. Don’t overmix.
  • Add 2 whole blueberries to the bottom of the popsicle mould, fill 1/3 of the yogurt mix, add 2 more blueberries and top with the rest of the yogurt mix. Fill the 8 moulds. Add sticks and freeze until hard, about 8 hours.
  • To remove the popsicles, run up warm water to loosen. Don’t get water in the popsicles though. Remove and enjoy.
