Kulfi is often described as traditional Indian ice cream. And it is one of THOSE ice creams you eat just ONE scoop of – just ONE MORE! This ice cream is thick and creamy filled with bursts of slightly salty pistachios. You don’t need an ice cream machine to make it. It’s literally beat, beat some more and freeze! The hardest part of this recipe is to wait util it’s frozen! If you’re a little more zhuzh (gosh I had to look the spelling up!), make the ice cream into popsicles – then people might be too shy to ask for just ONE MORE! Did you know that there are 150 varieties of blueberries out there? But all are edible; some are actually toxic! These blue beauties are nutrient dense superfood loaded with anti-oxidants and they even reduce levels of bad cholesterol! That is why I love feeding them to my children. They love ice cream, so making these popsicles is a sure winner with them. They feel so empowered when they can open the freezer door and help themselves to these “ice cream” lollies!

Bao buns are a delicacy throughout many parts of Asia. I think of them as an Asian-type burger, just healthier than the versions we are used to! When filled with slow-cooked and pulled pork shoulders complimented by barbeque sauce, spring onions, coriander, onions, sesame seeds and the compulsory chilli, the result is a sticky mess to devour with your hands. Definitely not first date food! Or maybe it should be?!

Cabbage is having a bit of a moment right now, and I feel as if I’ve been waiting for it all along. This Asian Cabbage Salad with peanut dressing is light and bright, filling, and has been adding a burst of life to my lunch routine.
