- 500ml cream
- 1 can caramel treat
- salt to taste oil
- 250g pecan nut brittle, roughly chopped
Cheat's salted caramel ice cream with pecan nut brittle
Who doesn’t love ice cream? And who doesn’t love caramel? So to combine the two is a marriage made in heaven! This recipe is embarrassingly quick and easy! You don’t even need an electric mixer; you can just mix it all by hand. Peel’s makes awesome honey pecan nut brittle which you can buy online or get Ooh La La salted pecan nut brittle from Yuppiechef. I often make individual ice cream cakes instead of a tub of ice cream. If I do that, I make of crumbed Tennis biscuits (200g) mixed with melted butter (75g).
Method
- Lightly whip the cream with an electric mixer.
- Add the caramel and mix until well combined.
- Stir in salt to taste and 200g of the pecan nut brittle in and freeze until firm.
- Take the ice cream out of the freezer about 10-15 minutes before serving because homemade ice cream is really hard!
- Top with a bite-sized piece of pecan nut brittle and enjoy!
